Ingredients:
- 1 cup cook quinoa (about 1/2 cup uncooked)
- 1 cup frozen corn (thawed), or you can use fresh cooked corn
- 1 can black beans, drained and rinsed
- 1 cup shredded chicken (I used chicken breast)
- 4 Tbsp BBQ sauce (I used the spicy Jack Daniels)
- 2 Green Onions Chopped
- 2 Tbsp of guacamole*
Directions:
- Boil the chicken breast in water until done, then shred it (mix the BBQ sauce with the chicken once you shred it)
- Rinse the quinoa for about a minute
- Cook the quinoa in 1 cup of water for 12 minutes, or until all the water is gone
- Drain and rinse the black beans
- Add black beans to the corn.
- Chop green onions
- Mix all of the above with the quinoa when it finishes cooking
- Top with guacamole, or fold in avocado and cilantro
